Five late summer recipes from fellow bloggers

I don’t browse food blogs often enough—it usually just makes me hungry. I did a little browsing just now. Here are some delicious recipes I found.

Melon Mozzarella Salad with Honey, Lime and Mint

This refreshing looking dish from Nicole over at Pinch My Salt not only sounds like the taste of summer, it also has a nice kick of crushed red pepper. Because, as Nicole puts it, “After living in Sicily for four years I now put crushed red pepper in just about everything.”

Cucumber, Yogurt and Dill Soup

Soup doesn’t have to be strictly cold weather fare. Soup Chick (the alter ego of Lydia over at The Perfect Pantry) proves it with this simple no-cook soup that you serve ice cold.

Savory Pancakes with Chicken Curry

Okay, so maybe this dish doesn’t scream summer. But with chickpea pancakes, curry, mango chutney, ginger, coconut milk and more, it will taste like an exotic summer vacation. Interestingly, Nick over at Macheesmo based this recipe on a dish he had in Amsterdam.

Tomato Salad with Sesame Oil, Soy Sauce and Cilantro

I was shocked, shocked, I tell you, to see that I had missed Mark Bittman’s latest 101 List in July (101 Simple Salads for the Season). Kristen over at Gezellig Girl didn’t. She made this beautiful, simple tomato salad from #15 on the list with tomatoes, sesame oil, soy sauce and cilantro. And she says she “may never eat tomatoes any other way ever again.” That’s good enough for me.

Heirloom Tomato Panzanella with Poached Eggs

This one had me at the stylishly casual photo. I could picture the yolks of the poached eggs oozing over everything as you cut into them. Then I read that Angela over at Spinach Tiger had made this traditional Italian bread salad from bruised tomatoes rescued from a farmers market. How could I not post this?

Grilled Eggplant Sandwich

Okay, I know I said five recipes. Then I saw this beautiful sandwich Elise made over at Simply Recipes. It gave me an idea of what to do with my leftover mozzarella from this week’s Peach Caprese Salad. Better yet, it came with a back story of Elise having to overcome not actually liking eggplant. I had to do that too, not so long ago. This looks like a great way to get there.

  1. I love the tomato salad very similar to the one I make, however, using sesame oil may be a great substitution for regular olive oil

    Sesame oil can be an interesting change up, Lauren. And while I know Bittman is always going for minimal, some toasted sesame seeds sprinkled on top would be nice too.

  3. These all look terrific! I thought I was being smart (that always gets me in trouble) and signed up for email updates on every food blog I came across. (Yours being one of the very first.) I also did the same with writers’ and poets’ blogs. Every week I go to the same ten or twelve blogs total. My favorite, really miss them if I can’t make it. As for all of the rest of the really wonderful blogs that I receive email updates for? I won’t tell you how many unread emails there actually are, but it’s in the thousands. I just keep saving them in folders thinking someday I’ll be able to get to them. Yahoo! Mail has unlimited storage, sooooo…….

  4. Ha! I know exactly what you mean, Dani. Blog email subscriptions have become the equivalent of subscribing to too many magazines and never making it through the stack before the next batch arrives.
