Cookina reusable cooking sheets: nonstick comes to the grill

Some things are just made for grilling. Chops, steaks, slabs of eggplant. In my experience, though, fish is not. No matter how carefully I scrub the grate on my charcoal kettle or how much I oil it (and the fish itself), the delicate flesh of even comparatively sturdy fish such as salmon often sticks. So I was delighted to be introduced to Cookina reusable nonstick cooking and grilling sheets at the International Home + Housewares Show this spring.

Based in Canada, Cookina makes a number of reusable sheets for both the oven and the grill. One of our favorites is their Signature Reusable Non-stick Sheet. It comes in a 15-3/4-inch wide roll that’s almost five feet long—you cut it to fit your grill or oven. Like all Cookina sheets, it’s made of a food-safe, PFOA-free composite Fluoro Polymer plastic that is flexible, durable and nonstick on both sides. It washes up with soap and water and is designed for repeated use. For most of us, a single sheet should stand up to a summer’s worth of grilling. When food starts to stick, replace it.

I took the Signature Reusable Non-stick Sheet for a test drive with skinless salmon fillets (not the salmon steaks you see above). When the grill was ready, I laid the cooking sheet directly on it and let it heat up for a couple of minutes. When the salmon fillets hit the cooking sheet, there was an audible sizzle. They browned nicely, even showing grill marks. And I was able to flip them easily with tongs, with no sticking.

Cookina says to make sure the sheet does not cover the entire cooking surface. I would add to cut the sheet to just accommodate the food you’re cooking. Smoke doesn’t penetrate the cooking sheet, so to achieve optimum smoky flavor, cook with the grill closed and make sure there’s plenty of uncovered grate surface to allow smoke to circulate freely.

Cookina also makes sheets that can be used for baking, in place of parchment paper or foil, and oven guards that protect against messy spills and splatters that can get baked on the oven floor. You can find Cookina at Home Depot, Amazon and the Cookina website.

  1. These sheets really have me intrigued. We just barbecued/smoked baby back ribs for several hours this weekend. They came out great, but even though we didn’t add sauce until the last few minutes, my husband spent about an hour cleaning the grill this afternoon. Will definitely try these sheets next bbq grilled ribs!

  2. John, for fish it is super. Anything delicate, for that matter, or small enough to fall through the grate.

    Barbara, I think that using the Cookina when you apply the sauce would be perfect timing. That way, the meat would get the full advantage of smoking on the open grate, but wouldn’t stick once you added the sauce.

    I use the non stick aluminum foil for wings and ribs in the oven and BBQ but it’s expensive, never on sale and not that easy to find. This would be so much better. Parchment tends to curl up and is not so great in a really hot oven. I will definitely look for it. Thanks!
    This would work nicely in your delicious Braised beef short ribs recipe as my parchment tends to turn into a scroll.

    I’m trying to purchase the reusable cooking sheet which has comes as a 15-3/4-inch wide roll that’s almost five feet long. All of the packages I’ve seen appear to have a singe sheet.
